Felt good to get out today. Even if it was just up to Salt Lake to pick up my meals today.
I think we forget how lucky we are just to run out and jump in our truck and drive to where ever it is we’re going and get things done.

I just wanted to post on here keep you all up-to-date.. and to be honest I could think of 1 million other places I’d rather be. Other then the hospital of course so I’ll just stay grateful.
I think we can always find something to be grateful for whatever situation is if we look hard enough.
I think it’s important to be comfortable spending time alone to find out who we truly are and what we want out of life.
To find out what our dreams, our vision and what are goals are. Then stick to them!
I choose to spend my time reading learning and growing.
Serving others. I know, it sounds crazy especially with my situation. In whatever way I can. I was trying to buy the persons drink behind me and it makes me feel good. I think we sometimes lose sight of the value and benifit we get helping others that really makes me appreciate it A lot more not being able to do as much as I normally do. Just have to find different ways.
I figured so many people help me it’s my duty and obligation to pay it forward helping or making new friends everywhere I go like so many have done for me.

Would you believe that there is a difference of 20 pounds between these two photos? 🤔
When I stepped on stage (left) I was 100 lbs. and on the right I was 120 lbs.(I dropped 10 pounds just in water weight FYI) 💦
On the left I was 16% body fat, which is fairly high for competition and also healthy.

On the right I’m guessing 19 or 20% body fat.

I’m currently 116 lbs and doing a mini-cut to drop body fat for summer, aiming for 110-112 lbs and to maintain that.

Not much has changed with training and nutrition, other than I’m having a few more days at deficit calories and doing my best to avoid over eating.

Believe it or not, me at 120 lbs is a result of loose tracking and a lot of food.

I hopped on a new fly machine to do a workout I don’t normally do. Usually I’ll just stay in my wheelchair and go jump on the cables using one arm at a time.
Today with a little help from some of my buddies I decided I wanted to push and challenge myself to engage both sides really focusing on my body posture and strengthening some of those core muscles I don’t normally use.
It’s such a little seat I really had to focus on staying balanced. I’ll be honest I biffed it off of there onto the floor before I even got started of course in the middle of a packed gym. I went swimming last night end it felt great! Pro7 Brekkie Bars

Ingredients:
2 cups gluten free rolled oats
1 scoop Pro7ein Cookies & Cream protein powder from @NutrishopUSA and @NutrishopDublin
2 tablespoons coconut sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1 egg, beaten
3 tablespoons sugar free syrup
1/2 cup almond milk
1/4 cup raisins
1 tablespoon of enjoy life mini chocolate chips.
Instructions:
Preheat the oven to 375 degrees.
In a large bowl combine all ingredients and mix until well incorporated.
Fold in the raisins and the chocolate chips.
Line a 9x5 inch pan with parchment paper.
Pour batter into pan. Bake for about 25 - 30 minutes or until a toothpick pulls out clean.
Enjoy! .

HEAT UP DINNER WITH THESE CARIBBEAN CITRUS HABANERO CHICKEN SKEWERS 🔥

INGREDIENTS
8-9 pieces boneless skinless chicken breasts, diced into 1"
2 pieces yellow or sweet onions diced into 1"
2 pieces red or green bell peppers diced into 1"
pieces Fresh pineapple diced into 1" (I bought some already diced from my grocery store)
MARINADE:
3 tsp orange zest
1 1/2 cup orange juicefresh is best, but good quality bottled juice is okay
1 cup plus 2 Tbsp soy sauce
3 Tbsp vegetable oil
10 cloves garlic minced
2 Tbsp El Yucateco Caribbean Hot Sauce, more or less for your taste
2 1/2 tsp fresh thyme minced
1 1/2 tsp fresh oregano minced
5 Tbsp honey more or less to your tastes

INSTRUCTIONS
In a large mixing bowl, add marinade ingredients and whisk to combine well. Remove about 1/3 cup and place into an airtight container and refrigerate. Set aside the remaining marinade.
Trim chicken breasts of fat and dice into 1" pieces.
Add to bowl with the marinade and toss to coat. Cover tightly with plastic wrap and place in the refrigerator for 30 minutes, or up to 2 hours.
Dice onion, pepper and pineapple into 1" pieces and set aside.
Preheat grill over MED heat.
Make skewers by alternating chicken, onion, bell pepper and pineapple.
Grill, basting with reserved marinade, for several minutes per side, until chicken is cooked through.

The work doesn’t stop. I’m training to do a marathon in Salt Lake City on April. I’m not just training to do a marathon in April. I’m training for the race on life. We’v only got one. We have to make the best out of it! Its would be a shame to all of those who have pasted before to not make the best of it. They would love to take our place.
We only have one body and it has to get us to the end. It in our best interest to take care of it so we can feel the best we can on our way. I got a lot to be thankful for. Tie that to a goal or two and you’re on your way to living a very happy life.
Loosing my legs has been the best things that could have happened to me. Make me realize how powerful our minds our. Often underused or used wrongly. The single most important muscle we have. My wish or my hope is people discover the hidden potential we have, usually buried under our fear and self doubt, at an early age and cultivate it to make all of there dreams come true. Imagine all of the things we can achieve and inventions that have not yet been discovered. It fascinates me. That’s the kind of beautiful world I want to live in. “I believe I can fry” -Sweet Potato 🍠

Baked Sweet Potato French "Fries"
Cut into French fry shaped pieces
Place on a non-stick cookie sheet
Lightly brush pieces with EVOO or coconut oil
SEASON to your preference, try garlic, sea salt, rosemary and pepper
Bake at 425 for 15-20 mins, flip "fries"
Broil for about 5 mins to add that crispy element
Enjoy!

Last night was know different.
The thing I know about life is it can be challenging. There’s no doubt about that. It can seem unfair and be very unforgiving at times.
That’s going to happen. The trick is not staying there to long if you can help it. I found that it’s good to cry sometimes.
Nobody can be perfectly happy or strong all the time. That doesn’t even make a good Disney movie. Lion King was my favorite.🦁
Do you know what else I was thinking or wondering? Don’t you hate it when your laying there at home on your bed and you can feel the tears starting to come out so you close your eyes because you don’t want to cry no more and they still somehow come out? How does that happen? Or was that just me.. I highly doubt it! That what I thought.

A light, simple, and flavorful recipe for this #TacoTuesday 🌮

Avocado Lime Sauce
1/2 cup sour cream
1 avocado ripened
2 tablespoons cilantro fresh
1 tablespoon lime juice fresh
zest of 1 lime
1/2 teaspoon serrano pepper seeded and chopped
.
Blackened Mahi Mahi Tacos
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons dark brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
3/4 teaspoon cumin ground, McCormick
1/4 teaspoon chili powder
1 1/2 pounds Mahi Mahi filets cut lengthwise into smaller pieces if needed
1 tablespoon vegetable oil
8 corn tortillas 6-inch
8 lime wedges
1 cup tomatoes diced
1 cup red cabbage sliced thin
1 cup green cabbage sliced thin
cilantro
INSTRUCTIONS
Combine sour cream, avocado, cilantro, lime juice, lime zest and Serrano pepper in a blender; process until smooth. Transfer to a small bowl and refrigerate.
Combine paprika, brown sugar, garlic powder, onion powder, salt, cumin and chili pepper in a small bowl. Sprinkle seasoning evenly over both sides of the fish filets.
Heat oil in a large cast-iron skillet or sauté pan over medium-high heat. Add fish to pan; cook 2-3 minutes on each side or until desired degree of doneness.
Warm tortillas according to package directions. Divide fish evenly among tortillas. Serve with lime wedges, tomatoes, cabbage, and cilantro.

I’m 10 weeks out from my next competition, the @wbff_official Los Angeles Pro-Am, and as motivated as ever to bring my best yet to the stage 😁💪
I get a lot of questions about how I stay on top of my diet, even having an odd schedule and traveling constantly. I can sum it up pretty easily;
-
1. I flexible diet and have done so for years. This allows me to eat alternative foods in a pinch to still hit my macros.
-
2. If your sleep schedule is disrupted by jet lag, still try to consume your macros in 24 hour windows. I mean that if you’re still awake late and are hungry, you can keep eating but deduct those macros from the next 24 hour period. I also believe that as long as your weekly average is still hitting what your daily macros should be then you’re golden 👌

3. I pack a few basic, non-perishable items on every trip. These include things like instant oatmeal packets, single serving containers of peanut butter, protein powder, tuna packets, etc. It’s definitely not the most savory way to hit my macros but I’d rather get them through boring foods I always have available than go over or under my macros.

4. I also pack a few @1percentfitness meals with me so that I can avoid airport food while in transit and have complete meals ready to go for at least the first day or two of my trips until I figure out what the next meals are going to come from. Make sure your hotel has a fridge and preferably a microwave too!

Failure to plan is planning to fail and planning is the name of the game in successful bodybuilding. Once you’re planning for your trips in a more consistent way it makes getting ready for travel much quicker, easier and most importantly; less stressful!!
