My family would easily go through 2 boxes of granola a week so making my own ends up financially better for me as well as me knowing exactly what ingredients are in it. This is Amy’s preferred post @paulo_guillobel Snack, granola with coconut yogurt. You can really load it up with whatever you want. This one is almond, coconut, chia seeds, hemp seeds and raisins.
This recipe makes about 8 cups as I know they will eat if all but feel free to cut in half if needed. .
7 cups of oats (gf if you prefer)
1 cup chopped almonds
1/2 cup unsweetened coconut
3 tbsp chia seeds
3 tbsp hemp seeds
1/4 tsp kosher salt
1/4 cup coconut oil
1/2 cup raw honey (maple syrup for vegan)
1 tsp pure vanilla
1/2 cup raisins
Mix the first 6 dry ingredients together. Heat the next 3 in a pot over low. Leaving the raisins until it’s cooked. Do not boil. Once ingredients are mixed together, pour honey mixture over and mix. Bake in oven at 350 for 25 minutes, stirring half way through. Once done, stir in raisins and leave to cool. This will crisp up once cooled. Enjoy!! Store in airtight container for up for 3 weeks (if it lasts that long!! ) .
